Normally, Tue Boeuf vinifies and bottles three separate estate Cheverny Rouge wines: Rouillon, Caillères and Gravotte. But the challenging 2021 vintage made that impossible, so what fruit they could harvest from these three sites was made into a more broadly named Cheverny Rouge. Typical of their reds, the fruit went as whole clusters into huge oak tanks for an open-top, semi-carbonic fermentation.
