The grapes are racked after harvest and dried until at least 1st December which is around 2 months after harvest. This process known as appassimento, shrivels the grapes concentrating the juice before they undergo a slow press and fermentation. Oak aging is required for a minimum of 2 years before bottling, equating to heady, complex wines.
