Teaming up with an old high-school friend, they take non-GMO neutral grain spirit and infuse ten botanicals tocreate a well-balanced and complex gin loyal to the London Dry style.\u0026lt;\/p\u0026gt;\u0026lt;p\u0026gt;The botanicals are steeped in the spirit for 24 hours, then distilled out yielding 300 gallons per batch. Heads and tails are cut aggressively to reduce any bitter or vegetal notes. These arenot re-distilled.\u0026lt;\/p\u0026gt;\u0026lt;p\u0026gt;In order to achieve consistency from batch to batch, reserves of previous distillations are added to the most recent batch evoking a kind of solera.
