Naturally, the topic of drinking came up. Next thing you know, they three are forming\u0026lt;em\u0026gt; \u0026lt;\/em\u0026gt;\u0026lt;em\u0026gt;Louisiana Spirits \u0026lt;\/em\u0026gt;to bring Rum production back to the Creole State. Founded in 2011, they have an 18,000 square foot distillery producing a line of award-winning Rums under the Bayou label and haven’t looked back.\u0026lt;\/p\u0026gt;\u0026lt;p\u0026gt;\u0026lt;em\u0026gt;Bayou Select\u0026lt;\/em\u0026gt; is their barrel-aged Rum. But it is not “just” barrel-aged for a minimum of three years in ex-Bourbon casks. It is aged using the Solera method. And as you may remember, \u0026lt;em\u0026gt;the Solera method\u0026lt;\/em\u0026gt; means that the “average age” of the Rum is far older and gets better with each passing year because the barrels are never completely emptied — a portion of the older Rum is left to mingle with the new. Of course — just like with all of their Rums — they use local Louisiana, unrefined sugarcane and leave the molasses in.
