The locations all offer west-facing exposure and enjoy soils with an essentially calcareous and basaltic composition.Vinification:Immediately after harvesting, the grapes are crushed and left to macerate on the skins for about 12 hours at low temperature: spontaneous fermentation takes place in thermoregulated steel tanks.
