The 6-hectare vineyard has 45- to 70-year-old vines grown on rocky schist soils with quartz and flint pebbles. Fermented at low temperatures, the wine matures on lees for 8–14 months with regular bâtonnage, then is bottled straight from the lees, preserving a light natural spritz.Food PairingExcellent aperitif.
