The wine spends 2 years in barrel for elevage and is bottled unfined, unfiltered, and with a small amount of sulfur added.\u0026lt;\/p\u0026gt;\u0026lt;p\u0026gt;Matthias grew up in a small, family-owned winery. He spent time in South Africa and Southern France, where his passion for natural wines grew steadily.
