It was started in 2005 by \u0026lt;em\u0026gt;Anthony Wills\u0026lt;\/em\u0026gt;, who ran an independent single cask bottling company for 8 years, and was immersed in building \u0026lt;em\u0026gt;the ultimate farm distillery\u0026lt;\/em\u0026gt;, where he’d take Whisky back to its roots.\u0026lt;\/p\u0026gt;\u0026lt;p\u0026gt;The Kilchoman distillery is unique for several reasons. It’s \u0026lt;em\u0026gt;one of only six\u0026lt;\/em\u0026gt; Scotch distilleries to carry out traditional floor maltings, and \u0026lt;em\u0026gt;one of only two\u0026lt;\/em\u0026gt; to do the malting, distilling, maturing and bottling on premise. Furthermore, they \u0026lt;em\u0026gt;grow their own Barley\u0026lt;\/em\u0026gt; on the farm itself, whereas most other distilleries purchase it around the country (or even abroad). They use \u0026lt;em\u0026gt;30% of their own barley\u0026lt;\/em\u0026gt;, and the balance is purchased from Port Ellen Maltings. It’s one of the smallest Scotch distilleries, with an annual output of 120,000 litres, and when you talk about \u0026lt;em\u0026gt;artisanal\u0026lt;\/em\u0026gt;, this is as good as it gets with Scotch Whisky. They’ve been \u0026lt;em\u0026gt;rocking it ever since\u0026lt;\/em\u0026gt; they started, and we should all be mega excited to see where it leads to next.\u0026lt;\/p\u0026gt;\u0026lt;p\u0026gt;\u0026lt;em\u0026gt;Machir Bay \u0026lt;\/em\u0026gt;is their main product. It’s a \u0026lt;em\u0026gt;vatting \u0026lt;\/em\u0026gt;of 4 and 5-year-old Bourbon cask matured and \u0026lt;em\u0026gt;Oloroso-finished\u0026lt;\/em\u0026gt; malt. Machir Bay was awarded a \u0026lt;em\u0026gt;Gold Medal\u0026lt;\/em\u0026gt; at the 2012 International Wine and Spirit Competition, and it was also named \u0026lt;em\u0026gt;Whisky of the Year \u0026lt;\/em\u0026gt;at the International Whisky Competition. Definitely \u0026lt;em\u0026gt;one of the most exciting\u0026lt;\/em\u0026gt; Scotch releases out there in the recent years, with a different style than you’d expect from an Islay Scotch. \u0026lt;em\u0026gt;Still peated\u0026lt;\/em\u0026gt;, mind you, but just different.
