Seventy percent \u0026lt;u\u0026gt;\u0026lt;\/u\u0026gt;\u0026lt;u\u0026gt;\u0026lt;\/u\u0026gt;of the vins clairs are fermented and raised in stainless steel tanks, with the balance in old barrels. \u0026lt;u\u0026gt;\u0026lt;\/u\u0026gt;\u0026lt;u\u0026gt;\u0026lt;\/u\u0026gt;Consequently, seventy percent of the blend went through malolactic for this bottling. The bouquet is excellent, wafting from the glass in a mix of pear, apple, hazelnut, a fine base \u0026lt;u\u0026gt;\u0026lt;\/u\u0026gt;\u0026lt;u\u0026gt;\u0026lt;\/u\u0026gt;of chalky soil tones, dried flowers, gentle smokiness and a very discreet touch of buttery oak.
