It matures on its lees in seasoned barrels and stainless steel, with minimal SO2 addition before bottling. The result is a wine that emanates a captivating, almost medicinal fragrance, infused with Mediterranean herbs and sea air. It has a hazy yellow appearance, with floral aromas and notes of elderflower, guava, and passion fruit. On the palate it reveals classic Zibibo flavours of ripe stone fruits like peach and apricot, alongside lemongrass, oolong tea and herby notes. Medium to full-bodied on the palate, it’s marked by its purity, an uplifting saline acidity, complex minerality and a long, complex finish.
