The brothers had wanted to create a distillery that was the \u0026lt;em\u0026gt;very antithesis\u0026lt;\/em\u0026gt; of an Islay farm distillery. They built a cathedral-like, \u0026lt;em\u0026gt;state-of-the-art\u0026lt;\/em\u0026gt; Victorian still house, where they used 6m tall stills, which was unheard of at that time, and way ahead of its time.\u0026lt;\/p\u0026gt;\u0026lt;p\u0026gt;Today, the distillery remains pretty much the same as it did over 100 years ago. Their belief is, as the French culinary saying goes, \u0026lt;em\u0026gt;“it is in the oldest pots that the best soup is made”\u0026lt;\/em\u0026gt;. Slow fermentation, slow distillation, in very traditional, wooden vats and huge washes made from towering Douglas Fir.\u0026lt;\/p\u0026gt;\u0026lt;p\u0026gt;However, they don’t just make Whisky, they also \u0026lt;em\u0026gt;produce Gin\u0026lt;\/em\u0026gt;. For the \u0026lt;em\u0026gt;Botanist Islay Dry Gin\u0026lt;\/em\u0026gt; the craftsmen at Bruichladdich use \u0026lt;em\u0026gt;9 classic Gin\u0026lt;\/em\u0026gt; aromatics and a whopping \u0026lt;em\u0026gt;22 additional local botanicals\u0026lt;\/em\u0026gt;, which are hand-picked from the windswept hills, peat bogs, and Atlantic shores of the Hebridean island of Islay. This Islay specialty is distilled \u0026lt;em\u0026gt;4 times slower\u0026lt;\/em\u0026gt; than the average Gin, in Bruichladdich’s \u0026lt;em\u0026gt;Ugly Betty\u0026lt;\/em\u0026gt;, one of the few remaining \u0026lt;em\u0026gt;Lomond Stills\u0026lt;\/em\u0026gt; in existence. It’s the only Gin produced on the Isle of Islay.
