Organically farmed vineyard at 1600 ft ALS and South-East facing. Poor volcanic soils. Making of: the grape pomace was rehydrated and then spontaneously fermented, including malolactic fermentation. Canned without fining, filtration or any additional SO2 adds. Carbonated to a CO2 level of 0.38g\/L, so it has a bit of fizz to it, similar to what you’d find a beer. Personality: Intense apricot and honey notes with hints of cereal (freshly malted grains) on the finish.
