<p>A singular, late-harvest Savagnin from organically farmed Jura parcels, with the 2009 fruit dried on clay mats (<em>passerillage</em>) to intensify sugars and aromatic compounds. Fermentation began spontaneously in barrel and—owing to extraordinary concentration—continued at a glacial pace for 12 years before naturally arresting. Bottled unfined, unfiltered, with zero added SO₂.</p><p>The result is a deeply textural, sweet-but-balanced expression: dried apricot, candied citrus, warm spice, and honeyed depth, all threaded by Savagnin’s innate acidity and a gentle oxidative shimmer. A rare, time-bent wine where every year of slow fermentation shows—meditative, layered, and genuinely otherworldly.</p>
