<p>Tim Manning’s Vinochisti takes Erbaluce out of its DOCG comfort zone and into a skin-contact, long-élevage register. The fruit (organically farmed) is handled with an extended maceration on the skins, then raised patiently in neutral vessels—old barrels and/or cement—to build texture without oak imprint; it’s bottled as Vino da Tavola to keep the cellar free of DOC rules, with minimal intervention and low sulfur. The 2013 reads savory and tensile: quince, yellow citrus, and chamomile wrapped in gentle tea-like tannin, finishing long on a chalk-saline line.</p>
