The year 2020 was very good in the Douro region, ensuring penning of thegrapes, resulting in the production of an enormously appealing wine.</p><p>After crushing the grapes with the stems and disinfection with a small dose of sulphur dioxide,the yeasts selected were inoculated. Fermentation was carried out in small stainless steel vat at a temperature of between 28 º and 30 º C, with regular use of the pump aeration process. After malolactic fermentation the wine was left in wood barrels for a year. Bottling was conducted around a year after harvesting and the wine was subjected to a slight clarification and then filtered. The wine was not stabilized using artificial cold enabling it to form a slight precipitation over time, which had no effect whatsoever on the quality of the wine.</p>
