<p>Grapes are manually harvested from biodynamically farmed young (20-year-old) vineyards. A combination of direct pressed grapes and whole clusters are softly pressed. Fermentation occurs spontaneously with native yeast in stainless steel vats and barrels. Les Agudes ages for 6 months in stainless steel vats, barrels and casks before bottling. This wine is unfined and unfiltered. SO2 additions are 0-30 mg/L dependent on vintage.</p>
