<p>Catarratto, alberello (bush vines) planted 1987, 80m, facing north. Soft and slow pressing, purposeful oxidation of the must to protect it from future oxidation. Fermented in stainless. Aged mostly in stainless and a small part in acacia. Bottle-aged for over 2 years before release.</p>
