<p>This inaugural cuvée is sourced entirely from old-vine Chardonnay in Avize Grand Cru, where pure Campanian chalk and thin topsoils give intensely mineral, high-tension base wines. The domaine farms sustainably and harvests by hand, pressing whole clusters in the traditional Coquard press. Fermentation is carried out with indigenous yeasts in a mix of stainless steel and seasoned barrels, followed by full malolactic fermentation. The wine is bottled for secondary fermentation and aged extensively on lees before release. It is finished with a low dosage to keep the Chardonnay’s chalk-driven structure at the forefront.</p>
