<p>Winemaker notes:This is from the exceptional Two Terraces vineyard (Mangatahi Terracesregion), established by the very hardworking Ian & Linda Quinn. The site isslightly higher in elevation and has distinct diurnal swings – hot days, cool nights. Thisis ideal for maintaining higher levels of acidity and aromatics. Having allocated rows allows me to apply Biodynamic preparations to the soil and canopy in the rows during the growing season.</p><p>0% whole bunches were kept for structure and aromatics. During fermentation the tank was drained (deléstage) and the juice splashed back over the must to introduce air & wet the cap. After pressing the wine was transferred into my new Tinajas (amphorae), which had just arrived from Spain. The Leon family have been making Tinajas by hand since 1783. I love the purity of fruit and intact expression that one can achieve by maturing the wine in contact with this special clay.No additions were done at any stage, including sulphur. The wine is unfiltered and unfined.</p>
