<p>From a south-facing parcel in Nuits-Saint-Georges’ northern sector, <em>Les Procès</em> is a prime 1er Cru planted with massale selection Pinot Fin. The 2021 vintage reflects the domaine’s precision-farming and minimalist cellar approach. The vines are densely planted, farmed biodynamically, and pruned for low yields.</p><p>Grapes were entirely destemmed by hand—a hallmark of Charles Lachaux’s approach—and fermented with native yeasts in open-top wooden vats. Gentle infusion replaced pigeage, and the wine was raised in seasoned French oak (low-toast, 10–15% new) for approximately 12 months. No fining or filtration.</p><p>The resulting wine balances detail and depth: fine tannins, lifted red fruit, and a mineral-driven spine—hallmarks of both the lieu-dit and this domaine’s new-era precision.</p>
