<p>100% Melon de Bourgogne. Gras Moutons is a 1.7-hectare lieu-dit on a windy, south-facing slope in the Muscadet cru of Monnières-St. Fiacre. The sandy clay soils are rich in decomposed amphibolite (compacted sand) rocks and gneiss (granite metamorphized by pressure & heat). The vines are 20 to 70 years old. The farming is certified-biodynamic and the all vineyard work including harvest is manual. As for the all Pepière wines, the fruit is direct-pressed and the juice settled naturally for 12 hours. It is then fermented in stainless steel tanks with natural yeasts; the wine is aged on its lees in large, underground, glass-lined cement tanks for 9 months.</p>
