<p>From the historic <em>Le Chapitre</em> climat in Chenôve—once classified at the level of a premier cru—Bizot farms tiny, low-yielding parcels on thin limestone and marly soils. As always at the domaine, vinification is ultra-gentle: whole berries, native yeasts, no pump-overs, and élevage in carefully chosen barrels with minimal sulfur. The 2021 captures the tension of the cool, late season: tart red cherry, pomegranate, rose petal, and a vivid limestone snap, wrapped in Bizot’s signature silken tannins. Weightless yet intense, with a long, mineral, almost saline finish. A hauntingly pure expression where “Bourgogne” feels like an understatement.</p><p>Arrives 12/12/2025.
