<p>VINEYARD: 35 to 40 years old vines</p><p>SOIL: Metamorphic amphibolite derived from gabbro rocks.</p><p>VITICULTURE: Organic (EcoCert) and biodynamic farming; Pruning method: Guyot Nantais; Planting density: 6,800 vines/hectare</p><p>VINIFICATION: Exclusively hand-harvested grapes. Direct pressing of whole bunches in a pneumatic press. No chaptalization or clarification. Alcoholic fermentation with natural yeasts.</p><p>AGING: Aged in glass-tiled concrete vats for 6 monthsb on fine lees</p><p>NOTES: A wine best expressed in its youth, Amphibolite is citrusy and sizzling with a lovely salinity on the finish.
