Fruit from old-vine parcels is hand-harvested and fermented spontaneously with native yeasts, using gentle pump overs to preserve delicacy and freshness. The wine is then aged in a mix of neutral oak and large casks, bottled unfined and unfiltered with minimal sulfur.</p>
