<p>A tiny, natural sparkler from Hiroto & Rie Sasaki’s micro-estate in Castiglione Tinella, ‘Croché’ is a Barbera- and Freisa–based red grown on clay-limestone/loess hills and bottled with a gentle, natural re-fermentation for fine bubbles. Hand-harvested fruit sees a short skin maceration and spontaneous ferment in stainless steel; élevage stays in tank with minimal sulfur before tirage and bottling. </p>
