<p>Grapes are hand-harvested and destemmed. The juice is fermented in open casks for about 15 days, punched down by hand. The wine is aged in 220-liter barrels for about 3 months. The wine is bottled unfined and unfiltered under crown cap, with zero addition of sulfur.</p>
