This is Pecorino in its most layered, mineral-driven form—grown in limestone and marly-clay over sandstone, fermented with indigenous yeasts, and aged 18 months in tank and bottle before being bottled unfined and unfiltered. It’s rich yet electric, with ripe apricot, kiwi, lemon oil, and sweet spice, balanced by a salty, beeswax-inflected depth. Creamy on entry, taut and lifted through the finish, this is a Pecorino of serious pedigree and tension.</p>
