<ul><li>Variety: Pinot Noir</li><li>Size: 0.40 ha (0.99 ac)</li><li>Vine Age: Planted in the 1980s</li><li>Terroir: From Mont Battois above Beaune, on a plateau at 350m altitude, surrounded by forests, shallow soil.</li><li>Viticulture: Biodynamic (not certified), late hedging by hand with shears.</li><li>Vinification: 100% whole-cluster, 2-3-week ambient yeast fermentation and carbonic maceration in tank, minimal extraction by wetting the cap with buckets and 2-3 foot treads near the end of fermentation, aged for 10-13 months in used 228 and 350 L barrels, blended in tank for 1 month, no fining, no filtration, SO2 only added before bottling (approx. 10 ppm).</li></ul>
