<p>Sourced from a single parcel within the Lavaux Saint‑Jacques Premier Cru, the largest climat in Gevrey‑Chambertin at approximately 9.5 hectares and shared by over thirty growers—Lavaux is a complex mosaic of rising slopes, diverse drainage, and deep clay-limestone soils sculpted by the Combe de Lavaux wind tunnel effect, creating cooler ripening conditions and firm structure. </p><p>Claude Dugat’s 2023 bottling is hand-harvested, fully destemmed, and fermented using indigenous yeasts in open-top vessels. Gentle extraction preserves purity of fruit while building structure. The wine is aged for 15–16 months in French oak barrels—typically including some portion of new wood—to integrate tannins and add fine-grain texture. It’s bottled unfined and unfiltered.</p>
