Fermentation is carbonic in concrete or sealed tanks for lift and aromatic purity, followed by roughly eight months on lees to round the tannins—yielding a juicy, low-tannin profile built for serving lightly chilled. Expect wild strawberry, raspberry, and blood-orange notes with floral lift, Mediterranean herbs, and a delicate peppery finish.</p>
