Farming is biodynamic, harvests are manual, and the must sees a long, gentle pneumatic press before settling 24 hours and going to oak for fermentation. Élevage runs 12 months in barrel (about 22% new; mix of Allier/Vosges) followed by 6 months in tank, with only a light fining/filtration if needed.
