<p>From the domaine’s organically farmed vines in Volnay and Meursault, this Passetoutgrain is a true field blend of Pinot Noir and Gamay, co-planted and co-fermented in the old style. The fruit is hand-harvested and fermented with native yeasts in open-top vats, using gentle pump overs to favor perfume and freshness over extraction. Élevage runs about a year in neutral barrels, preserving the purity of fruit and site. </p>
