<p>Alessandro Salvano’s project, Drink Wines Not Labels, strips winemaking down to its core: old vines, zero additives, and clean cellar work. This is 100% Chardonnay from a single site outside Alba, grown on marl and limestone, farmed without chemicals.</p><p>Fermented whole cluster in concrete with native yeasts, it sees zero sulfur and no fining or filtration. Eight days on skins before pressing into tank. It’s lean and textural with a quiet grip, showing citrus pith, mineral tension, and just enough weight to ground the edges.</p><p>A Chardonnay made without shortcuts or flourishes—precise, expressive, and entirely unmasked.</p>
