<p><ul><li><p>100% Pinot Noir</p></li><li><p>Origin: Savigny-lès-Beaune (Burgundy); organically farmed fruit from a highly regarded grower (also sells grapes to Bastian Wolber).</p></li><li><p>Vinification: 10–12 days whole-cluster maceration; part in a large wooden tronconic vat, part in stainless steel. Cap management by bucket wettings only (remontages au seau).</p></li><li><p>Élevage: 9 months in old 228 L barrels, then 9 months in bottle.</p></li><li><p>Additions/Finishing: Native yeast (no inoculation). Unfined. Unfiltered. SO₂: 1 g/hL at bottling (~10 mg/L).</p></li></ul>
