<p>The Aligoté is drawn from a single plot of very gently sloped vines below Meursault and next to the village of Corcelles-les-arts.</p><p>Soil: Clay-limestone</p><p>Vinification: Manual harvest, no added yeasts or enzymes, very rarely any bâtonnage, no racking, cold and very slow fermentations (late-occurring malolactic conversion)</p><p>Maturation: 18 months in barrels of older barrels, light fining and filtration</p>
