<p>Pinot Noir from Ladoix-Serrigny “Buisson”, southwest-facing, clay-limestone parcel with vines planted in 2008 (50%) and in the 1940s (50%). Even though this is a Bourgogne Rouge, it reflects its terroir at the foot of the hill of Corton, with a little grip.</p><p>100% whole cluster, 10 ppm SO2 added before vinification, fermentation started with an ambient yeast pied de cuve with white grapes, daily wetting of the cap with a bucket, punch downs after 5-7 days, pressed after 10-14 days with a vertical press, aged for 8-10 months in used barrels, no fining, no filtration, 5-10 ppm SO2 added before bottling (approx. 35 ppm total at bottling)</p>
