<p>Pinot Noir from Savigny-lès-Beaune “Aux Fourches”, southwest-facing, clay-alluvium-limestone parcel with vines planted in 1974. This Savigny comes from an alluvial fan at the north of the Combe Rhoin on a bed of rounded cobbles and clay- a collection of loose stones rather than bedrock.</p><p>100% whole cluster, 10 ppm SO2 added before vinification, fermentation started with an ambient yeast pied de cuve with white grapes, daily wetting of the cap with a bucket, punch downs after 5-7 days, pressed after 10-14 days with a vertical press, aged for 8-10 months in used barrels, no fining, no filtration, 5-10 ppm SO2 added before bottling (approx. 35 ppm total at bottling)</p>
