<ul><li>Size: 0.37 ha (0.91 ac)</li><li>Variety: Aligoté</li><li>Vine Age: The majority are about 30 years old, with a small portion of very old vines (about 100 years!).</li><li>Terroir: Catharina owns the very old vines in Pommard (representing a half barrel); the remainder is located in Volnay (comprising about 4 barrels).</li><li>Viticulture: Biodynamic</li><li>Vinification: ⅓ de-stemmed but with skin contact for 5 days in 50L crates; ⅔ directly pressed as whole clusters in basket press. Indigenous yeast fermentation with no sulfur added until after malo. Aged for 6 months in 350L older oak barrels.</li></ul><p>1 btl limit per customer. Wine arrives 06/30/2025</p>
