Vines planted around 2015 deliver early, mineral‑driven fruit.</p><p>Fermentation begins with a light crush and no settling, followed by ~14 months in 350 L demi‑muid barrels (just 10% new oak), then ~3 months in stainless steel before bottling. Indigenous yeast fermentation, unfined, unfiltered, and low—or no—sulfur throughout.</p>
