Drawn from 0.855 ha of village holdings planted between 1945 and 1985, across five parcels in four lieux-dits—Champs Goudins, La Pré de la Folie, Les Chalandins, and Aux Ormes—farmed organically (not certified). The fruit is 100% destemmed after strict sorting, given ~10 days of cold maceration, then fermented 10–20 days with indigenous yeasts in tank with no SO₂ added pre-malo. Élevage runs 15–18 months in barrel (≈50% new), with SO₂ added only after malolactic (domain norm ~20–25 ppm free, 40–50 ppm total); no fining and only light filtration.</p>
