This bottling is taken from the first commercial Cayuga planting in the Finger Lakes, located on the west side of Cayuga Lake on silty loam soils. Hand-harvested, whole-cluster pressed; fermented in 2/3 stainless steel and 1/3 neutral barrel. Six months’ fermentation, full malolactic. Unfined, unfiltered, zero added SO2.</p>
