<p>The Wyatt Cabernet is sourced from well-drained, sustainably farmed benchland vineyards located in Lodi.</p><p>South Facing. Gravel loam </p><p>Farmed using sustainable methods</p><p>The grapes were de-stemmed only, then transferred using gravity to steel tank. After a long, cold soak the must was allowed to warm and ferment with indigenous yeast to dryness. The wine stayed on the skins for an extended maceration to develop mouthfeel and structure. Malolactic fermentation was left to complete indigenously.</p><p>Aged for 18 months in barrel with 25% being new.</p><p>Dark colored with deep flavors of plum, dark berry and herbs with an opulent texture and balancing tannins and acidity.</p>
