Many of my favorite wines are like this: Michel Grisard’s mondeuse or the wines of Jacques Maillet.” – Icy</p><ul><li>“Roc Blanc”, Mercurey, southeast-facing, calcareous sandy marl.</li><li>Viticulture: Purchased grapes, organic (not certified), 9,000 vines/ha, guyot trained.</li><li>Vinification: 80-90% whole cluster, 10 ppm SO2 added before vinification, fermentation started with an ambient yeast pied de cuve of white grapes, daily wetting of the cap with a bucket, punch downs after 5-7 days, pressed after 10-14 days with a pneumatic press, aged for 8-10 months in used barrels, no fining, no filtration, 10 ppm SO2 added before bottling.</li></ul>
