<ul><li>Calvados produced by seventh-generation distillers Jean-Michel, Emmanuel, and Jean-Gabriel Camut in the Pays d’Auge region of Normandy, France, at Domaine de Semainville</li><li>Distilled from 100% apples grown in orchards planted in the <em>hautes-tiges</em> style; many of the apples are heritage varieties</li><li>Cider is fermented in wood for 10–11 months</li><li>Twice distilled on copper pot stills fueled by wood</li><li>Aged 35–40 years</li><li>Reduced with rainwater and aged in large vats and tonneaux made primarily of Limousin oak and filled no higher than 75% full to promote oxidation; no new wood is used</li><li>Browned butter and walnut rancio on the nose. A mineralic palate speaks of candied apple, black tea, and dehydrated lemon. Cigar spice and a touch of orange come through on a sprightly finish.</li><li>40% ABV</li></ul>
