<p>ORGANIC / NATURAL / VEGAN </p><p>This wine is named after the cold ‘Zierzo’ wind that comes in from the east, which helps the grapes cling on to the acidity necessary to balance out this full-bodied wine. The grapes macerate on their skins in steel tanks, before being drained into large oak barrels to ferment with their ambient yeasts and are bottled unfined and unfiltered, and without the addition of any sulphur. A cloudy orange colour, it has notes of candied orange and mince pie on the nose; on the palate it’s very tannic and lively, with flavours of orange, pineapple and background notes of hay, hazelnut and a saline minerality. </p><p>Samuel picks only the best grapes from his 35 hectare family plot, all of which are farmed organically with a sprinkling of biodynamic principles mixed in. Despite the baking hot summers – which help the grapes achieve maximum ripeness and flavour development – the high altitude and brisk easterly wind help preserve a nice freshness and balance in the wines.
