<p>HIGHLAND: Edradour’s ‘heavily peated’ expression is a lesser known gem. Relative to the Islay malts, the peat is much more subtle but generous maturation times in both bourbon and Oloroso sherry really shine through. Ballechin is the name of a fellow Perthshire farm distillery which closed its’ door in 1927.
