<p>Pure, light and lively, with fine bubbles and citrusy aromas of grapefruit, orange peel, as well as peach, quince, and a slight honeyed note. The palate is fresh and dry, with minerals from the calcareous nature of its terroir.</p><p>Grapes for this one are grown on the white albariza soils, characteristic of the Marco de Jerez region, full of chalky clay, marine fossils, and limestone.</p><p>Manual harvest in mid-August is followed by fermentation in steel tanks. A second fermentation takes place in the bottle, following the traditional method, resulting in a 20-month aging period.
