<p>A perfectly-aged Rum that brings great spirits back to the Sugar State.</p><p>It happened much as you might expect. <em>Brothers Tim and Trey Litel</em> were duck hunting with their friend Skip Cortese in a duck blind between the Bayou and a sugarcane field in southern Louisiana. Naturally, the topic of drinking came up. Next thing you know, they three are forming<em> </em><em>Louisiana Spirits </em>to bring Rum production back to the Creole State. Founded in 2011, they have an 18,000 square foot distillery producing a line of award-winning Rums under the Bayou label and haven’t looked back.</p><p><em>Bayou Select</em> is their barrel-aged Rum. But it is not “just” barrel-aged for a minimum of three years in ex-Bourbon casks. It is aged using the Solera method. And as you may remember, <em>the Solera method</em> means that the “average age” of the Rum is far older and gets better with each passing year because the barrels are never completely emptied — a portion of the older Rum is left to mingle with the new. Of course — just like with all of their Rums — they use local Louisiana, unrefined sugarcane and leave the molasses in. The resulting spirit is double distilled in copper pot stills right on site.</p><p><u>Smartass Corner:</u><em>The first sugarcane fields in America were in Louisiana.
