Unfiltered and hazy, it’s made from grapes grown around Gavi, fermented with native yeasts in large oak casks.</p><p>Stefano Bellotti took over his family farm in Gavi in 1977 at just 18. Starting small, he embraced biodynamic farming, guided by pioneers like Alfredo Roagna and Jean-Pierre Frick.
