<p>Le Trou Normand.</p><p>In the region of Normandy apples are pressed into cider, from which this distinctive <em>Eau de Vie </em>originates. The <em>Berneroys are masters</em> of distillation and blending, and they have a keen eye for all the small things that are involved in the process of making their Calvados live up to its reputation. It is <em>Grande, Oui Grande</em>, we tell you.</p><p>Berneroy Calvados XO is made from apple must (juice) of over 180 named apple varieties. This juice is then fermented for a minimum period of four weeks before being <em>once distilled</em> in an antique copper column. Single distillation makes the Berneroy Calvados fruitier and <em>distinctly more</em> aromatic than some of its counterparts. It is aged for <em>up to 25 years</em> in casks made of Limousin oak.</p>
